Sangria!

As promised my sangria recipe that I concocted last weekend at our family Christmas party! This is such a fun party drink!
I looked up several recipes online and took ideas from them all and this is what I came up with.
1 Bottle Big Boy red wine from Four Daughters (Or any good bottle of red wine)
1 bottle of cheap Merlot (Or use two if you don't want to use a good one)
4 shots triple sec
1 Cup orange juice
2 Oranges sliced
2 Apples sliced
2 Lemons sliced
7 - 8 Cups of ginger ale

Pour wine, triple sec, and orange juice into a large container (I used an ice cream pale) and add sliced fruit. Let chill overnight. Before serving pour into a drink dispenser or a punch bowl would work too, add the chilled ginger ale! It's best served over ice!

Enjoy!
Its' so delicious and so easy!

Grand Prix Final

I am so behind on my figure skating posts! It's terrible!
The Grand Prix Final was a couple weeks ago and it was so good!
I was especially happy with the ice dancing results! Meryl Davis and Charlie White (USA) beat Tessa Virtue and Scott Moir of Canada! Yay!
Javier Fernandez skated so well in his long program landing all three of his quads and one in combination! He unfortunately did not do so well in his short program so wasn't on the podium. His performance was still my favorite though!
I was really hoping that Ashley Wagner would skate well and take first but unfortunately she had some mess ups in her long program and took silver. She has been so rock solid all year, oh well can't be perfect all the time! She still had the best presentation of any of the ladies though!

Now I can't wait for Nationals!

The Obnoxiousness That Is My Family

This past weekend my Mom and Dad hosted my Mom's side of the family (fifty plus people!) for Christmas! It was so fun to see everyone and catch up on each others lives! There is seriously nothing like family! And I think that mine is pretty darn sweet!

For the majority of the afternoon we congregated around the island talking talking and eating snacks and drinking the amazing sangria I made! I will post the recipe soon everyone loved it even some people who normally drink beer!

So much good food!!!

She pulled the stool out all by herself so that she could sit and listen!
It was a perfect day with family!

I might be a little excited!

Landherr Christmas! I cannot wait to see all my Aunts Uncles and cousins tomorrow!!! And drink lots of the amazing sangria that I'm going to make!
Volunteering at the Salvation Army: I love doing for others especially this time of year. My work is so good at reaching out as a group. This year we adopted a family and have bought them tons of gifts! We are also filling boxes for Christmas dinners at the salvation army.
Christmas Eve: My absolute favorite day of the year I cannot wait for you! This year my sibs and I are all at my parents for the festive evening! Mmm I can't wait for the Oyster stew!
Christmas! "For unto us a child is born!" The greatest gift of all!
New Years Eve Week: Would you just get here already! I cannot wait to go and visit my dearest friend in Chicago! Oh the fun that will be had:)
We need more of this white stuff ASAP!

Happy Friday everyone!

Moscow Ballet's Great Russian Nutcracker

Anticipation was just the beginning! The Nutcracker was absolutely amazing! The whole evening was wonderful! It was just perfect! The restaurant I chose was so so good! Locally grown food and cooked to perfection!

The martini  "Hollidazzle" was so good at the end of dinner we asked for the menu back to write down the ingredients! We literally went to the liquor store the next day! When we get it figured out I'll let you know the recipe!
 Eek I was so excited!!!!
As we walk in and get our tickets scanned the guy tells us "Your VIP you have a gift!" WHAT? We're what? So we backtrack to a table where a lady hands us each a bag with a book and a nutcracker in it! Guess you get what you pay for:) We continued in and got a glass of wine, found our way through the beautiful hall; exquisite painting and woodworking, to our seats!

That were AMAZING! Could we have been any closer?! Okay we were like little kids it's true it was so so much fun!!!
There is nothing like Ballet. The pure elegance, power, grace and beauty as they float effortlessly across the stage, all while telling a story without a word being spoken! Breathtaking!
When we came out.... it was SNOWING! The city was so pretty with the trees lit up and the snow falling! I could seriously do this every weekend! It was a perfect evening!

Happy second week of Advent!

Anticipation!

I'm back! I am not sure what happened there I haven't done a post in what seems like weeks even though it's only been one! I think this crazy schedule is getting to me! I feel like I am always packing and unpacking to pack again! If you get what I'm saying:)
I am so incredibly excited that it is Friday! My Mom and I are going to the Moscow Ballet's Great Russian Nutcracker at the Orpheum in Minneapolis! It is one of my most favorite childhood Christmas stories! Okay it's still my favorite! I have never been to the Orpheum either, I'm just a little excited! I literally just made reservations for what looks like an awesome restaurant! I am so pumped for a fun Mother daughter night out! And what a way to get into the Christmas spirit!

I cannot wait!!!!!!!:)

Grateful Friday!

There is always so much to be thankful for!

Food! I'm always hungry!
The fact that we are approaching the Christmas season, and for all the preparations that come with it!
For Advent: A time to be spiritually ready for the coming of the King!
Christmas trees! I had so much fun decorating all of you!
Mine at my apartment

My parents whimsical tree!

The Victorian one in the living room!
For the Christmas music that is playing right now, the tree lit up and reflecting back from the window and the glow of the candles on the mantle! I love this time of year! Can you tell;)

The opportunity to go back to the mother ship (Mayo) for training in pediatrics! I have learned so much this past month, and it's a career goal come true!

A random text from my Mom (Who has sworn she would never text!) at 12:30 A.M. saying "Your adorable" It made me smile when I got it first thing this morning! It's all about the little things!

For being able to catch up with an old classmate and friend!

Realizing that your sometimes boring non dramatic life is okay great after you hear the drama of another persons life! Wow some people! And being reminded to be thankful for the fact that you have your head screwed on straight!

Have a wonderful weekend everyone!

Liebster Award

So a few days ago Sarah from Random...thoughts and feelings nominated me for the Liebster Award! So sweet she made my day! Thank you Sarah! I think this is such a great fun idea! I enjoyed reading all the random questions and facts about the different bloggers. So here goes mine!

Grateful Friday

I hope that everyone had a wonderful Thanksgiving yesterday and you are recovered from the food coma! For all those who go shopping today I think your brave and I hope you get all the good deals you wanted!

Family!
That I got to spend the day with them yesterday!
My amazing parents who have taught me such great values, morals and common sense! And so so much more about life!
For my sisters, I would not be the person I am today without you! I have learnt so much from my sisters! To be grateful for movement and to be patient!
For my brothers, they seriously are the best! For teasing me and making me laugh! For making me tough! Growing up with so many siblings was a blast and still is! It's a party every time we get together! Now I get to play with there awesome kids:) It just keeps getting better!

For my patients. It is a hard virtue! Great things come to those who wait........and work their butts off! I have been forced learnt to be a patient person though. Because I know it is always worth it in the end. I try to continuously remind myself not to wish away the moment because I am excited for what is to come. At one point in my past I couldn't wait till I was at this point in my life. So enjoy it before it slips away! Right? Make the most of the moment and time that has been given to you! Patients is not the ability to wait, but to keep a good attitude while you are waiting.
Happy Friday everyone! I am so excited to decorate for Christmas this weekend:)!!!! Oh I just love Christmas!

What are you grateful for?

Triple Chocolate Mousse Cake

As promised the recipe for the amazing Mousse cake! It is so worth making it! You'll love it! Also I would recommend using Lindt Chocolate! It's the best!

Serves 12 to 16
This recipe requires a springform pan at least 3 inches high. It is imperative that each layer is made in sequential order. Cool the base completely before topping it with the middle layer. We recommend Ghirardelli Bittersweet Chocolate Baking Bar for the base and middle layers; our other recommended brand of chocolate, Callebaut Intense Dark L-60-40NV, may be used, but it will produce drier, slightly less sweet results. Our preferred brand of white chocolate is Guittard Choc-Au-Lait White Chips. For best results, chill the mixer bowl before whipping the heavy cream. The entire cake can be made through step 8 and refrigerated up to a day in advance; leave it out at room temperature for up to 45 minutes before releasing it from the cake pan and serving. For neater slices, use a cheese wire or dip your knife in hot water before cutting each slice.
INGREDIENTS
Bottom Layer
  • 6tablespoons (3/4 stick) unsalted butter, cut into 6 pieces, plus extra for greasing pan
  • 7ounces bittersweet chocolate, chopped fine (see note)
  • 3/4teaspoon instant espresso powder
  • 1 1/2teaspoons vanilla extract
  • 4large eggs, separated
  •  Pinch table salt
  • 1/3cup packed (about 2 1/2 ounces) light brown sugar, crumbled with fingers to remove lumps
Middle Layer
  • 2tablespoons cocoa powder, preferably Dutch-processed
  • 5tablespoons hot water
  • 7ounces bittersweet chocolate, chopped fine (see note)
  • 1 1/2cups cold heavy cream
  • 1tablespoon granulated sugar
  • 1/8teaspoon table salt
Top Layer
  • 3/4teaspoon powdered gelatin
  • 1tablespoon water
  • 6ounces white chocolate chips (see note)
  • 1 1/2cups cold heavy cream
  •  Shaved chocolate or cocoa powder for serving, optional (see note)
INSTRUCTIONS
  • 1. FOR THE BOTTOM LAYER: Adjust oven rack to middle position and heat oven to 325 degrees. Butter bottom and sides of 91/2-inch springform pan. Melt butter, chocolate, and espresso powder in large heatproof bowl set over saucepan filled with 1 inch of barely simmering water, stirring occasionally until smooth. Remove from heat and cool mixture slightly, about 5 minutes. Whisk in vanilla and egg yolks; set aside.
  • 2. In stand mixer fitted with whisk attachment, beat egg whites and salt at medium speed until frothy, about 30 seconds. Add half of brown sugar and beat until combined, about 15 seconds. Add remaining brown sugar and beat at high speed until soft peaks form when whisk is lifted, about 1 minute longer, scraping down sides halfway through. Using whisk, fold one-third of beaten egg whites into chocolate mixture to lighten. Using rubber spatula, fold in remaining egg whites until no white streaks remain. Carefully transfer batter to prepared springform pan, gently smoothing top with offset spatula.
  • 3. Bake until cake has risen, is firm around edges, and center has just set but is still soft (center of cake will spring back after pressing gently with finger), 13 to 18 minutes. Transfer cake to wire rack to cool completely, about 1 hour. (Cake will collapse as it cools.) Do not remove cake from pan.
  • 4. FOR THE MIDDLE LAYER: Combine cocoa powder and hot water in small bowl; set aside. Melt chocolate in large heatproof bowl set over saucepan filled with 1 inch of barely simmering water, stirring occasionally until smooth. Remove from heat and cool slightly, 2 to 5 minutes.
  • 5. In clean bowl of stand mixer fitted with whisk attachment, whip cream, granulated sugar, and salt at medium speed until mixture begins to thicken, about 30 seconds. Increase speed to high and whip until soft peaks form when whisk is lifted, 15 to 60 seconds.
  • 6. Whisk cocoa powder mixture into melted chocolate until smooth. Using whisk, fold one-third of whipped cream into chocolate mixture to lighten. Using rubber spatula, fold in remaining whipped cream until no white streaks remain. Spoon mousse into springform pan over cooled cake and gently tap pan on counter 3 times to remove any large air bubbles; gently smooth top with offset spatula. Wipe inside edge of pan with damp cloth to remove any drips. Refrigerate cake at least 15 minutes while preparing top layer.
  • 7. FOR THE TOP LAYER: In small bowl, sprinkle gelatin over water; let stand at least 5 minutes. Place white chocolate in medium bowl. Bring ½ cup cream to simmer in small saucepan over medium-high heat. Remove from heat; add gelatin mixture and stir until fully dissolved. Pour cream mixture over white chocolate and whisk until chocolate is melted and mixture is smooth, about 30 seconds. Cool to room temperature, stirring occasionally, 5 to 8 minutes (mixture will thicken slightly).
  • 8. In clean bowl of stand mixer fitted with whisk attachment, whip remaining cup cream at medium speed until it begins to thicken, about 30 seconds. Increase speed to high and whip until soft peaks form when whisk is lifted, 15 to 60 seconds. Using whisk, fold one-third of whipped cream into white chocolate mixture to lighten. Using rubber spatula, fold remaining whipped cream into white chocolate mixture until no white streaks remain. Spoon white chocolate mousse into pan over middle layer. Smooth top with offset spatula. Return cake to refrigerator and chill until set, at least 2½ hours.
  • 9. TO SERVE: If using, garnish top of cake with chocolate curls or dust with cocoa. Run thin knife between cake and side of springform pan; remove side of pan. Run cleaned knife along outside of cake to smooth sides. Cut into slices and serve.

Trophee Eric Bompard

It was another fun Sunday afternoon watching figure skating:) I was so happy for Jeremy Abbott he skated beautifully and so much better than his previous performance at Skate America. If only he hadn't made a couple little mistakes in his free skate he would have taken gold instead of silver. Still he is such a beautiful learical skater, I love watching him skate!

Ashley Wagner was amazing again! I am so happy for her she has finally had a break through and she is magnificent! Just goes to show that hard work pays off! I remember the first time I saw her skate it was in person at the 2008 National Championships, I remember really liking her skating but she would always have a few mess ups that would hinder her placements. She now has the whole package, artistry that is beautiful, jumps that are technically sound, and great speed and spins oh and her connecting moves into and out of jumps just add to the performance and of course the points! She needs add a triple triple though!

Rostelecom Cup

I am behind on my skating posts!
Well I was so excited for this competition that took place in Russia because Johnny Weir was making his come back.....again. I was so disappointed he had to withdraw after the short program due to a hip injury. Witch also kept him out of the next competition that took place this past weekend.
I was hearing a lot of hype about Gracie Gold in the previous competitions so I was very excited to finally see her compete! She place seventh at Skate Canada I guess but they did not show her performance. She did not disappoint! Here is her short program, after which she was leading but overall took the silver. Amazing it's her first season competing as a senior lady!

That Is Borderline........Silly

What a wonderful birthday weekend it was! Time spent with family and long phone chats with friends catching up on each others lives:) So fun! Lots of wine good food and company!

We went out to Four Daughters! The band was awesome! They set the perfect mood for a winery, chill and classic! What a great night!

Oh my luck sometimes! How I meet boys.....I was trying to text someone the other day and well I put the number in my phone wrong and ended up texting a random guy. His response after I said "sorry" was this:
"Hey no need for apologies I'm a single male! LOL Have a great day Rachel"

Oh my gosh Okay? I didn't reply...Would you have? If so what would you have said?

That cello is pretty much the sweetest cello EVER!

The recipe for this amazing cake is coming soon:)
My new favorite line thanks to one of my brothers: that is borderline silly!

I hope you had a fabulous weekend too!

I am grateful for the friends that God has put in my life. Even though most of them live more than an hour away! They are the best! For long phone calls catching up on each others lives. Meeting my friends babies! I can't believe my friends are having babies! For being silly and laughing util we cry! For all the memories that I will cherish forever!

This is from my twenty first birthday!

Happy Friday everyone!

Rolling Pins and Griddles

Let the holiday baking begin! This past weekend my Mom and I made Lefse for Thanksgiving and Christmas! We started making lefse when I was a teenager. My Grandma taught us how. It always reminds us of her and we reminisce about when she was over and we made lefse! It makes me miss her. Her and I would go back and forth with teasing and always had a good laugh!
Rolling it is the hardest part! I never even attempted it! I left it to the expert, my mother:)
It was a fun afternoon with my Mom!

I can't wait to start baking Christmas cookies now!

Do you have any fun baking traditions for the upcoming holidays?

Grateful Friday

The little things! There are so many things in life that I enjoy, I just don't take the time to notice and realize it. I find myself rushing off to the next thing instead of enjoying the moment that I am in right now! So with that I am grateful for all the loveliness that is surrounding me at this moment. The cup of kombucha tea that I am sipping and the cute napkin it is sitting on; that reminds me of  a dear friend and all our wonderful memories of time spent together:)

For the trees that I see out my windows! I thank God for the beautiful creation he has created for all of us! For the stars in the sky that I can actually kind of see even though I live in town! I could gaze at the stars for hours:)

Mornings, the start of a new day another chance to do better, to grow even more into who I am meant to be.

Prayer, it fixes everything! Literally everything, give it all to God. He had it under control the whole time anyway!

Coffee, in the morning because it tastes so good!

Laughter, gotta remember to keep it light and joyful!

Movement, any kind running walking strengthening yoga TKD and most of all figure skating! Without movement I would go insane I would have no release.

For sweet letters from dear friends!

A good book.

Loosing track of time doing something I love!

Music. I love music, listening to it and playing it on the piano!

The changing seasons!

For friends!

For life, Life is beautiful.

Most of all I am grateful for my family and my Faith in God!

I could go on forever!

What are you grateful for today?

These are some of my favorite quotes, that I would say best describe me!
I LOVE a good challenge!
Patients. It's a virtue!
I really hope I can do this! How's that for a challenge?
Can you tell this is a tough one for me! It is so so true though!
My favorite quote! When life get's to be too much never forget to keep it simple!
WORK OUT! For me it fixes everything because I can always think so much clearer after a good work out! How about you?

"Gin and Tonic? What are you a sixty year old business executive?" ~My sister-in-law (to me) gotta love her:)

Do you have any favorite quotes?

Theatre

I love the theatre! There is something about a story being told live, with the actors right in front of you, no special effects no camera angles just pure creativity! A couple weekends ago I went to "The Philadelphia Story" at Commonweal Theatre Company my favorite theatre! It's in small town Lanesboro MN. I have been going there with my family since I can remember. There plays never disappoint and they are always a classic story, good clean fun, and their comedies are laugh out loud make your tummy hurt funny! The town itself is cute with lots of fun shops and some really good restaurants, with home cooked grown fresh food! I love an evening in Lanesboro. There is a great martini bar too!

The opening set of "The Philadelphia Story!"
The Philadelphia Story was excellent and I can't wait to go to the The Drawer Boy next weekend!

Do you enjoy the theatre, or have any favorite plays?

Happy election day! Go Vote!

Grateful Friday

It's November and the month of Thanksgiving! Oh and better yet......the month I was born! I might be biased but I think it's the best month of the year:)
First of all I am so grateful that it is Friday.
That I have such awesome coworkers:) I couldn't have asked for better! We definitely have more fun at work than should be allowed sometimes. Don't get me wrong we are busy, and hard workers too.
For Wednesday's at work when we get to watch conference and drink coffee for the first hour! It's great!
For Cathy's slang (top left in the pic)! It cracks me up! Here are some examples.
"Poop on a rope"
"Piece of Shrapnel" she says that to her computer all the time!
I'll think of more and add them......
Most of all for the great teamwork that we all have:)
And all the patients I get to help and sometimes be an instrument in saving a life!

So I have decided that every Friday in November I will do a grateful post! I need to learn to be more grateful and this will be a good way to do that!

Happy Friday everyone!

What are you grateful for?

Guess who came to town.......

Her and her whole family yes all nine of them came to Minnesota to visit for a fun packed weekend! Oh we had way too much fun. Somehow we always pack so much in too!

Like straightening my hair. What? you want to do what to my hair? I have naturally curly hair and have never taken the time to straighten it. Because let's face it I suck at doing hair! I thank God for my curls because if I didn't have them my hair would never be done.
Maggie "But Rachel it's going to look great!"
Holy crap I didn't realize my hair was that long! I kind of liked it, for something different a little more sophisticated look. That doesn't mean that I am about to rush to the store for a straightener though.
I miss her like crazy! New years can't come soon enough! My sister enjoyed all the extra people in the house too she was all smiles and giggles (top left:)
We played so much Dominion!

Thank you so much for coming! Nothing is better than great friends, great conversation, drinks and yummy food:) I am so glad we made it happen!

I think a new tradition was just born;)

Skate Canada

All right there is just way too much football on TV for me. I think it's a little overboard. I won't bore you with my analogy of grown overpaid men fighting over a ball:) So I am here to inform you of other...even better sports that are out there:) I love this sport called figure skating! This past Sunday the second stop of the Grand Prix of figure skating took place with Skate Canada. Javier Fenandez you may be my new favorite skater! He was the men's gold medalist at the event from Spain. Your long program was awesome. So artistic and entertaining and AMAZING! Three quad attempts, landed two of them and the third one was late in the program and.... in combination! Unbelievable really! The next Timothy Goeble AKA the quad king? Maybe! I can't wait to watch him improve over the season.
The men's gold medalist from Spain.

Other big news in the skating world. Johnny Weir is coming back!!  Gasp. gasp. what? Johnny queer! He likes the attention that's what my Mom and I say. Also he is doing Cup of Russia, for some reason he has a thing for Russia. Oh oh and the next winter Olympics are in Russia. hmm... Should be an interesting competition, I can't wait. He always adds a certain flair....I think he is just too much for me.
Anyway it was another fun Sunday afternoon watching figure skating!

Don't be offended football fans your sport will probably always be more popular....

Any skating fans out there?

But mine will always be superior:)

My kitchen lately

Mm I love fall cooking and baking! Stew, soup, pumpkin everything, and yummy baked goods!

I have been eating a lot of these lately: pumpkin spice muffins with pumpkin spice latte's! So delicious!

Speaking of latte's I recently got some amazing raw honey! For none other than lovely honey latte's! It's so delicious! Confession: sometimes the fact that I get to drink a latte in the morning is the only thing that get's me out of bed! After my morning run of course:)
I just made this delicious soup last night! I made it up as I went! I must say it is pretty darn good!
It's ground beef (Grass fed of course) onion, green pepper, summer squash, zucchini and noodles! With a creamy tomato soup base! It made a big pot full so I have some in the freezer for when I am too lazy busy to cook:)
Pumpkin ice cream.... interesting not amazing though. Still the fact that is was pumpkin and it's fall made me like it.

What are some of your favorite fall recipes?
